So I purchased the work sharp precision knife sharpener. And volunteered my esee 3 first. Instead of the 20 degree grind I decided to put a 15 degree edge on it. Lemme just say that this thing will carve wood now like nobody's business!!! An absolute powerhouse at shaving wood. I'm extremely happy with its performance now. My only complaint is the 320 grit diamond stone on the sharpener did take a long time to reshape it from 20 to 15. Other than that, it's well worth the $50 for the work sharp sharpening system.

That's a nice edge! After you use it a bit, please share how it holds up and if 15 degrees per side is too low for the blade profile and steel. My first 3 was resharpened to 17 degrees per side and was an awesome slicer.

Most definitely will. It reminds me alot of my mora 511. Seems to slice close to the way that one does. Will wait and see how the edge holds. So far so good though.

A guy on YouTube also did his to 17° and was complaining the edge rolled way to easy, so yes please keep us updated. I've been wanting to go 17 myself but with the issues he had I figured 20 was good enough.
