Salting meat to preserve

    the wet salted pork is gone, used it up over the last few months in slow cooked stews. Not bad, a little chewy.

    the dry stuff is cured solid, slices and re hydrates into a pulled pork consistency.

    Looks fantastic thanks for the update! So how does it do for carving of a piece and throwing it in a frying pan for breakfast?
