Starting to brine 20 lbs of pork belly to be turned into bacon next weekend.
We had a member years ago on the old forum that did a how to on curing bacon.
Found this in one of the hay fields today. Rare thing finding a shed around here despite the whitetail problem.
Started about a little over a year ago when my wife bought me an electric smoker for Xmas
I dug a ditch today. Dry hay and not bogging down the tractor is the goal. Should have it all put back together for first cut.

That didn't go as planned....
Yesterday's pleasant dirt road ride turned into a dead end after several tricky and deep gumbo holes.....
Took an evening trip to clear my head. Just went south to Harrison AR. Beautiful scenery as usual.
The rollercoaster is real.
Back to 70 degrees by Sunday.

that's what pisses me off about this winter...i keep waiting for a snowstorm so i can go camp. it keeps alternating between teens and dry but then when storm rolls around it's well above freezing...then as soon as the rain stops it goes back down to teens.
cold wet rain and a warmth sucking north wind down here. Not the kind of fun weekend I was hoping for.
We got snow last night and high is supposed to dip into the teens tonight. Yesterday was mid 60s and beautiful....
Morning. Time for a second cup of coffee. Anybody got any interesting plans this weekend. I am finally going to be smoking that 20 lbs of bacon today

Raised and purchased from a local farm. Ordered 10 pieces and forgot they were 2 lbs a piece. Was originally looking for 10 lbs total
