This recipe actually started 2 weeks ago but getting broodettes off to college got in the way. (We'll call that extra marinating time.)
Mines nor going to be very just blah either.

OK, She's getting another dose of Quick n Dirty Gumbo. Not because I'm out of ideas, but because getting the budget and the end of the month to work harmoniously was challenging!

I'm further convinced that before recipes like Gumbo, Irish Stew, ect, were codified and written down, they meant anything you could dig up, chop up, or whack with a stick and put in a pot! ( My Tx Mother had one called "Dishrag" that was made in a 17" cast iron skillet. )

This is a "make do". So some lost random pieces of breakfast sausage, lil chopped bacon, and 1 leftover chicken breast.
Ever trusting that I will let nothing drop that causes harm. Such faith.

Garlic, tomatoes, okra, corn...it's a quartet of delicious.
Onions, peppers, and a boon of carrots that were delivered...
A little roux, a little stock, a little simmer..
Some rice and this will put you in a good state. You might be sweaty but we're pirates...we won't care.

Today my friends I'm going to make something that's not in...a recipe book.
I give you, Braised Pork with apples. Done with an anrkst original take on taste.
This is going to be my braising sauce.
It's the end result of 2 weeks of research, testing, and pages of paper covered in weird indecipherable scribblings of a madman.
Buts it's good. The kind of "I need a straw" good.
(Pause for effect..)
(Guys, my isp connection is having a mental breakdown apparently..no wind, rain ect but it's twitchy. Hang on.)
This needs some goodness. I wanted pumpkin but there was none, acorn squash substitute, (butternut next time) a good hard apple (honey crisp ) carrots and onions..

You could use whatever cut or type of meat you like. Pork, beef, lamb, even duck would be good. She likes trim clean and boneless...can do.

I needed a way to Preheat this massive iron pot. To get a good sear on the meat..
It only sorta worked. The flame spread is too small I think. So the meat was a little less browned that I wanted..next time....
Then veg in, 3/4 cup chicken stock, 16 under, 20 top, about 400f-425f for 45 minutes ...
(Another internet twitch...sheesh.)
Oh my. The smell alone is mind blowing.

This would be a good one to add to the holiday menu. It's different, unique. Not hard to do but they don't know that.

This is Ras el Hanout. I built this recipe around it.
An anrkst creation, Chicken with Olives.
There were maybe 2 tablespoons in the original bag. I started digging and this light and flavorful blend is what resulted.
These need to be trimmed and prepped at least a day in advance..
What kind of T Rex sized chickens do these come off of?!!
And because I can't make "plain" anything..the trim is going to be a super flavor upgrade stock.
This will need some goodness, to fill in the gaps. Right?
