    OK, She's getting another dose of Quick n Dirty Gumbo. Not because I'm out of ideas, but because getting the budget and the end of the month to work harmoniously was challenging!

    I'm further convinced that before recipes like Gumbo, Irish Stew, ect, were codified and written down, they meant anything you could dig up, chop up, or whack with a stick and put in a pot! ( My Tx Mother had one called "Dishrag" that was made in a 17" cast iron skillet. )

    Today my friends I'm going to make something that's not in...a recipe book.
    I give you, Braised Pork with apples. Done with an anrkst original take on taste.

    This needs some goodness. I wanted pumpkin but there was none, acorn squash substitute, (butternut next time) a good hard apple (honey crisp ) carrots and onions..

    You could use whatever cut or type of meat you like. Pork, beef, lamb, even duck would be good. She likes trim clean and boneless...can do.

    I needed a way to Preheat this massive iron pot. To get a good sear on the meat..

    It only sorta worked. The flame spread is too small I think. So the meat was a little less browned that I wanted..next time....

    Then veg in, 3/4 cup chicken stock, 16 under, 20 top, about 400f-425f for 45 minutes ...

    This was a win. Not sweet but close.
    The level on the pot sure went down fast!

    This would be a good one to add to the holiday menu. It's different, unique. Not hard to do but they don't know that. :D

    She came back from a shopping trip with a little bag of spices. ;) Now picture yourself as a spice merchant, in the ports of the Black Sea on the Turkish side in the age of Constantine...
    This is Ras el Hanout. I built this recipe around it.
    An anrkst creation, Chicken with Olives.

    There were maybe 2 tablespoons in the original bag. I started digging and this light and flavorful blend is what resulted.
