Very good question... I am seeking the same answer. I would think it’s between 20 or 25% angle.
In the event they don’t answer, I will suggest you pick which angle by eye... where the Stone hits only on the uncoated steel.
Any chance on a Junglas 3......possibly 1/4” thick stock or regular thickness and maybe 18-20” blade
