the secondary ingredients, yellow fleshed spuds, carrots, onions, shallots, mushrooms, parsnips, chipotle peppers in adobe sauce see! see!!!!!! i use SMALL knives! caramelize the carrots , parsnips, spuds. By now the bottom of the cast iron stew pot is getting thick with baked on goodness. time for onions and shallots and the secret ingredient.......Pothole Filler Stout........so dark it makes Guinness look like @Zeek beer (clear, watery) pour it in and break the glaze on the bottom of the cast iron pan. Add sea salt, coarse black pepper, cumin, coriander - I just pour a heap into my hand and tossed in. I have NEVER measured any ingredient. add a ton of rosemary.....you cannot overdo this..... ok....too much food....need bigger pot....upgrading to the 16 quart cast iron pot mix everything together , add more stout (2 liters total) and a wee bit of water. Let simmer for hours. ohhhh the horror! I forgot the most important ingredient......GARLIC! you want 2 whole bulbs, whole cloves sautéed in olive oil. add the mushrooms last. slooooooooooow low temp simmer......for several hours. the aroma by now is AMAZING.
Oven Roasted Johnsonville Hot Italian Sausages, simmered in cumin, coriander, ginger, garlic, salt, black pepper curry sauce, with Brussels sprouts, zucchini and plenty of hot garlic. this will be added to some Kamut grain spiral pasta after, and garnished with fresh shaved Parmesan from Italy.
Having some beer and poppers. Party favorite. Halved jalapeños filled with cream cheese, stick a lil smokie on top with some brown sugar, then wrap with bacon. Stick under broiler till the bacon is cooked.
@Bushman5 Got this pic just for you. Was browning off some beef n tomatoes for a dish, decided to add some garlic, this is one clove from the bulb! There has to be 300 plants of this on my back property line.

Bacon Chicken Tofu Gumbo Can be done in a Potjie or Dutch Oven Package of bacon, thick cut , smoked . Two large B/S free range chicken boobs. One bulb garlic, peel cloves leave whole. 1 large carrot , chunked. One large onion, diced. One tablespoon whole cumin seeds. 1/2 teaspoon salt. One teaspoon black pepper. One jar PATAKS hot curry sauce. Start with hot Potjie or Dutch oven....add all the bacon and cumin seeds. Get the bacon partially cooked. Add the garlic, onions, salt / pepper. LAYER on the chicken then the carrots, then the chunked tofu (extra firm) Spoon out the PATAKS curry sauce, rinse out the jar and add that to the pot. Do not stir yet. Lid and place into oven at 275 for an hour or more. At the 60 minute mark add a little more fluid, beer or broth. Stir at this point and mix well, leave in oven for another 30 min. Serve on top of rice or on rice and lentils/chickpeas et You can go mild to wild with the heat. This PATAKS “hot curry” is very tame to me, around a 1 out of ten on the spicy scale Doesn’t look all fancy but it’s a variable ingredient recipe that is very tasty, hearty and cheap to make
Day 2. reheated in the same Potjie , in the oven. Added water to make it slightly soupy, some hot paprika , and then several handfuls of high fiber brown rice. Stir and back into the oven for 45 minutes on 200
toasted rice & farmers sausage heat up your cast iron pan or Potjie HOT and drop in some oil and a half stick of butter. Drop in 1 - 3 cups of brown or white rice. TOAST the rice in the hot oil until brown, stir constantly......... then add in as much or as little farmers sausage as you like, continue to brown the sausage and the rice ...... add chili powder to suit and stir. Add coarse chopped garlic. If you have an onion, add on , diced. continue to toast on high heat. STIR CONSTANTLY add warm stock or water , just enough to cover the rice and sausages, stir well and drop the heat to LOW. Lid the pot and let it simmer for a bit. more
I know.I wish I lived closer to him. We could take turns having dinner with him....one night my family goes to Bushy's house for a wonderfully cooked meal...then another night Bushy comes to our house to make another wonderfully cooked meal..... I'll keep him hydrated with all the beer he can drink (as long as it doesnt interfere with his cooking)
