Bbq time Flatbread with jalapenos , cheddar and some extra salt in my dough.... Used kefir to hydrate the dough.. Peppers, Tilapia filet and a veggy burger... Hmmmm Life is good I need some more patience before I flip the fish over... It stuck to the grill a bit.
Brought out my Dutch oven in the backyard today. Veggies cut with the BK16 Briquettes bkazing in the starte A couple underneath, most on the top Smells delicious Let it simmer And on the plate Super tasty
We've been hitting trip digits on my part of the planetary dirt so this is inside stuff. A bread knife makes cross splitting a breeze. And somehow, these furballs got it in their heads that "sharing is caring" and they won't be dissuaded otherwise. Now I like to fancy the recipe up a bit from the original version... Ala presto.. Lemon Chicken Picatta. If you want something tangy quick and easy give this a try.
A pleasant rainy days calls for Hot n Spicy Stir Fry. And because I'm doing it..It requires the mighty mighty 15 inch Aussie Bush Pot. Nothing get halfway done around here. Into the outside! ( accompanied by faithful assistant) With noodles! For the slippery fun of it! I'm serving... Best hurry though, even a mighty pot don't last long around here.
The amazingly astute bridal unit popped out and asked if I could make Chicken Tinga.. What the heck is Chicken Tinga?! Well, chicken tinga is just chicken slow cooked in a sauce made with roasted tomatoes and onions, chipotle peppers, and adobo sauce. But of course, nothing... NOTHING is ever actually NORMAL around here! (She is steadily trying to steal those bell peppers with me standing here looking DIRECTLY at her and telling her NO! Good grief. ) This chicken is beautiful. Its literally falling apart. So tender I could barely lift it out with tongs. You'll want to shred it and return it to the pan/sauce. I also made my signature Avocado Schmear and a pan of broiled Mexican Street Corn. Steamed Corn Tortillas, Queso Fresca and Chevre cheese, might take a wee nap after this.
