    Brand new recipe, never done it before right? Can I just follow the instructions? NOOO! I used Brown sugar instead of White, Added 1/3 cup of Cornstarch to help bind it ( Gluten free for Herself’s good health) and decided on a whim to add 3/4 cup of crushed Walnuts to the mix. :D

    Thanks, your cooking and baking in cast iron was the inspiration that made me want to try some cast iron myself. So the compliment coming from you is extra nice :D

    Even have similar supervision of my cooking in the back ;)

    Well.. This was going to be Boudin Stuffed Cornbread as much loved by my Louisiana sisters n brothers. But there seems to be some kind of conspiracy afoot to hide or horde all the boudin somewhere.

    Look at this. The element this was cooked on is still showing a heat signature.. But the entire 12 inch pot is gone.
    EVERY LAST BITE.
    Probably should never question "Why" I need a 15 inch 4 gallon pot or an 18 inch skillet to cook in..
    It might cause a sudden unplanned outbreak of... Violence. :D

    Costco had pork belly on sale for $10 off the sticker. Seems like an opportunity for fun. Did some pork belly in fried rice, but the main reason is to try my hand at bacon.

    Step 1: Cut it to fit a vacuum seal bag, weight, calculate, and rub.
    Looking for 2.5% salt, 1.5% brown sugar, and 0.25% pink curing salt.
    1660 grams * 0.025 = 41.5 grams kosher salt
    1660 grams * 0.015 = 24.9 grams brown sugar
    1660 grams * 0.0025 = 4.15 grams pink curing salt
    You can add pepper. Some recipes suggest onion powder, garlic powder, herbs like thyme. Let your conscience be your guide. Mix it all up, stir well, and rub. Slide it into the vacuum seal bag and seal it, and into the fridge for 7 days, flipping it over once a day. Take it out of the bag and rinse everything off. No vacuum sealer? Ziplok freezer bag.

    Step 2: Smoke it
    I ran 200F on the smoker with a couple of pieces of pecan. Recipes vary on suggested pull temperature. The longer you go, the more smoke.

    Step 3: Pull it. I opted for 155. Let cool to room temp, wrap tightly and refrigerate.

    Step 4: Pork belly burnt ends
    I didn't want to double down on bacon for my first attempt, but I know these are a crowd pleaser. Dice the belly into big chunks and hit it with your favorite rub.

    Step 5: Arrange on a wire mesh cooling rack for easy in & out of the smoker.

    Step 6: Smoke 2½ hours at 250F. Then transfer to an aluminum pan. Sprinkle with brown sugar and honey. Wrap tightly with aluminum foil, and toss it in the oven at 250 for another 1½ hours.

    Step 7: Stir to coat and feast. Vacuum seal any leftovers.

    Something like 15% of all Americas bacon is packaged in my home town so the local grocery store has 10 pound boxes of bacon "ends and pieces" for cheap, they are always loaded with big thick chunks of smoked belly, love to cube it and add brown sugar like that, soooo good! Pork belly is very underutilized, gets a bad rap with all the cholesterol propaganda.
