    Put a little sear on that bologna on your hot plate then swap the mayo for yellow mustard.

    Lol, one time during a horribly unsuccessful fishing trip we batter dipped some bologna and fried it.

    It was pretty good, but I’d had quite a few beers also, so the jury is still out on that one.

    I just got done eating chicken and pork fried rice. I was out of fried rice seasoning so I made something up. I marinaded some chopped up chicken thighs and pork chops in dales sauce and zatarains hot sauce. I added a little bit of peanut oil to a frying pan and dumped the meat and added some squeeze ginger, jalapeno powder, black pepper and fresh garlic. As that cooked down I drizzled a little honey over it. I cooked it until I was happy with the browness and stickiness. I dumped that on a plate and fried some Jasmin rice with sesame oil and salt and pepper with a little honey. When the riced was done I mixed in the meat. It turned out pretty good. I used to use a wok but found that it is much easier to cook the meat in a flat pan. I had too hard of a time cooking the meat evenly in a wok.

    Chili today.
    Simple recipe.

    1 lb ground beef, cooked and chopped fine, with salt and black pepper added
    1 sm-med onion, chopped fine and cooked in skillet until translucent

    1 can diced tomatoes
    1 can tomato sauce
    1 can chili beans (can be any beans you like)
    1 can chopped green chiles
    1 beef bullion cube
    1-2 tsp Cumin
    3-4 Tbsp Chili Powder

    Water to desired thickness.
    Sometimes I add beer also. It’s a good excuse to drink 3/4 of a beer at lunch :)


    I started ours today in the crock pot around noon, but sometimes I put it in the enamel covered Cast iron pot on the stove on low.
    Cooked until about 6pm when we ate.

    Typically just eat with saltine crackers, but tonight I added lots of shredded cheese, some yellow mustard, and a big handful of Fritos.


    Have just enough left over for chili dogs tomorrow.


    Fun variation, we used to do this with the Dutch ovens.
    Get your chili ready in the Dutch oven, then mix up some cornbread mix and pour on top.
    Cook the cornbread in the Dutch oven on top of the chili until it’s done.
    Can’t remember the timing or how many charcoal briquettes we normally use, but man is it good this way. Been a while since I’ve done it.

    Beef roast yesterday.

    First into the crock pot was an onion quartered, and four stalks of celery chopped in half.

    Seared the roast on all sides and put it on top.
    Little bit of water.
    Two beef bullion cubes, one packet each Italian dressing mix, ranch dressing mix, and brown gravy mix.
    Also added a healthy dose of Worcestershire sauce.

    Left on low for about 4 or 5 hours.
    Added a bag of baby carrots (all we could find) and also about 4 russet potatoes roughly chopped.

    Cooked on high for another three or so hours.

    Was amazing.


    Chopped up the leftovers today and made it into BBQ sandwiches on toasted brioche buns.

    Last night we baked some Knockwursts inside home made bread dough with some sharp cheddar cheese for good measure.

    Got some ramps yesterday while hiking in the woods down south. No pictures but had scrambled eggs with ramps, both leaves and bulbs. Was pretty delicious.

    Pancakes!

    From scratch pancakes blow Bisquick out of the water.

    These can be made as above.
    Or in a pinch powered milk and powdered eggs can be substituted. Or you can use water and skip the egg.
    Pretty versatile recipe.

    The pencil amounts to the left, are halved for a smaller batch.

    This recipe makes fairly thick pancakes. If you are like me and like your pancakes thinner, add a tad more liquid.

    These are easy and awesome.

    I imagine different folks are having different experiences as we navigate through this mess.

    We haven’t been inconvenienced too badly. But I believe that is partly because of our normal lifestyle.

    We pretty much live a simple lifestyle. Savages, Spartan, call it what you want. But we don’t go out to dinner much. I haven’t owned a television for years. I have some supplies put back, and so on.

    One thing we have always done. Is extreme utilization of our food stores. This was in place way before Y2K, and remains in effect through Covid. It’s just the way we choose to live.

    All this boils down to making good use of all you have. The photo below is a great example of that.

    It started with a red and green pepper that were about to go past their prime. I could have tossed them in the garbage. But instead, I chose to chop them up and freeze them.

    Thursday night we had burgers and baked potatoes. The bride baked four small spuds. We only ate two. The others got tossed in the fridge.

    This morning. I chopped up a piece of bacon, sautéd it up a bit. Then I added a half of an onion that was in the veggie draw. And about 1/4 cup each of frozen green and red peppers.

    I chopped the spuds skin into small chunks. Added some salt, some pepper, and a splash of Worcestershire sauce.

    Stirring it all together rendered a very tasty concoction. Not exactly rocket science here. But some folks may not think of planning ahead for use of leftovers.

    We almost always utilize all the food we prepare. And work diligently to not waste food. I’m not a tree hugger. But I’m not a moron either. Wasted food equals wasted income. I’d rather waste my extra money on ESEE knives, than spend it on food that gets tossed into the trash.

    This is just general info. I’m sure there are folks here who can work miracles with their culinary expertise. But I’ll also wager there are some folks who struggle with real food.

    Nothing happens overnight. It all takes time. But the reason I started this thread was to offer some help and ideas to the community here. It was originally targeted at the Covid Evolution, but all this will work in everyday life.

    I didn’t spend any time staging this photo. It was just peeled off my stove prior to serving. It looks down and dirty. But I can say with confidence, it tasted great.

    I added two over easy eggs and toast to this, but if you were truly hungry. It would have sufficed as a stand alone.

    Onions are good for many things in your body. Peppers have some vitamin c, spuds with the skins left on offer a decent amount of fiber. And it looks, tastes, and smells way better than some freeze dried pre-made packages.

    There is so much flavor available in leftovers. Sometimes the leftovers are better than the original meals.
