    Goin down southaways...this popped up in a food magazine mein beloved reads. She likes it, I cooks it. ;)

    Mexican Chicken Noodle Soup. So easy guys! Puree in, 2-3 minutes. Chicken in, 5-6 minutes. Chicken broth in, simmer 6-8 minutes. Noodles in, simmer additional 11-12 minutes. Mildly spicy ,garnish with avocado and lime wedges.
    What do you think? :)

    This is adapted from "Sopa de Albondigas". (Honduran meatball soup)

    I used these, but a 1/2 block of hamburger would work just as good.( It would stay frozen longer too. )

    So you just brown the meatballs...

    Then add your vegetables, beef broth, and spices, simmer for 12-15 minutes, and serve it.
    So easy. You could do this on a Coleman sitting on a dock. Grab the kids (or grandkids ya grouchy old geezers) and find a place to go....why sit around in the house?!!

    Start by mixing these,

    Some noodles, cooked 9 minutes, drained,rinsed,then coated by several cloves of mammoth garlic browned in butter

    Prepping some vegetation (not in the original recipes at all. ;) )

    and put a thin coating on your chicken.

    There is some doggie weirdness goin on in my kitchen..

    Brown your chicken, butter and olive oil. Then rest it but leave the scrapings in the pan

    Then saute your veg, small bits of butter,seasoning, and with a lid. Just to "mostly done". Then pour in 3/4 cup of chicken stock,1/4 dry white wine,1/4 lemon juice, a couple of tablespoons of capers and go to high simmer 5-7 minutes.

    Nest your chicken in,top with thin lemon slices,parsley, and a couple sprigs of rosemary. Reduce to low simmer another 7-8 minutes...put it on the table. Not hard to do and just full of unique zesty flavors. :)

    it is easy, :) Guarantee you there are a lot of “make a reservation/sit down/ eat by dim candlelight so you can’t see your tiny little portion of food” places that don’t want you to figure that out.

    It says to pull the meat and shred it, then mix it back in. Because I did find a small amount of stuck on in the pot I went this route. It was definitely flavorful and not what I was expecting. Good and zingy. :)
