    This WAS a full tray a few minutes ago...a trick from some internet scoping? Prick your spuds a few times all over, drizzle with olive oil and a tiny bit of coarse salt, then wrap/bake. Loads of moistness and flavor.

    I love cooking. ( you guys know this...! )
    Primitive cooking, 18th century cooking,cast iron cooking, Townsends, Julia Childs, Justin Wilson, Guy Fieri, Kent Rollins. I'm like a crack addict with internet. But I guarantee you, 927% guarantee you, if the forebears who walked across the west at the speed of an ox team had had access to modern stainless tri clad...They would have used it!! Practical wins out sometimes...Thus endth the lesson.

    The menu today is a simple and "normal" one. Slow cooked pork loin (marinated 7 days ) Real mashed potatoes (skin on) and homemade cream gravy with hot spicy sausage and fresh cracked black pepper.

    We have one stainless pan and i love it. Should buy more but haven't.

    I have a pretty serious amount invested in my collection. The higher quality tri stuff can give you sticker shock for sure. :) The vid channel “America’s Test Kitchen “ is a good resource haven. Theres meh, good, really good, and artistic off the chain crazy. A $40 skillet is just about the same as a $60 in another brand and the $250 super whoop tee do import from “we wear lace panties over here” is just....dumb..imho of course. ;)

    ...which far be it from me to be judgmental. I mean, if I had some nice panties I'd wear em. Back in the "crazee times" with Cricket Dave and hanging on the weekend with Mr n Mrs Shotgunner I tried like heck to get a pair of Esee panties...they were just always sold out. I asked some of the girls if I could borrow theirs...but they just gave me disgusted looks and said we couldn't be friends anymore....

    This is what happens when you can't leave well enough alone...Lima Beans n Ham.

    Happy 4th of July mein compatriots! Hope everyone is having a blow out time.
    Special shout to my friends down in Florida, I worked this up from The Backwoods Gourmet you tube channel down there in the swamps. Man puts a lot of care into his food. Well worth a look.

    Stuffed Portobello mushrooms. Fun and easy to do. My crew went at em like ravenous gators.

    Man it's hot. How hot? I dunno, the temp shows at 102f, what the heat index or "real feel" is anybody's guess. Feels like 107 109...I no likely.
    How about a Pork and Apple pie from the late 1700s Revolutionary War era? From the John Townsends collection. The type of food you might get in an inn or tavern back then....

    Just a touch of sear on the meat with a pinch of salt n pepper. Your not trying to cook it here though..

    Assembly is easy, tiny sprinkle of brown sugar in the layers, touch of nutmeg, Gill of white wine (about 1/3 cup.) cap full of lemon juice. ( next time I think I shall use powdered chipotle in equal amount to the nutmeg, hint of "zing". ;) )
