    A slightly left from center take on Hawaiian Chicken with sauteed vegetables. ( need to butterfly these next time, they take a long time to cook this way)

    Lady ash visited an estate/garage sale, she brought me a carbon steel wok, new in the box, from a hardware store that went out of business 25 years ago. I ran two seasonings at 490f, she didn't get for collector's value I hope..

    This was a quick add to an order to get free shipping, 53 pages total. Pg 24 is Sinigang (?) Fish soup. Sounded good..

    The recipe called for tamarind sauce, which I dont have, and couldn't find. Some time prowling obscure cooking blogs got me a mix from a Japanese soup cook who grew up in rural Japan in the 50s...1 tablespoon of olive oil, soy sauce, and white wine. Blend into 1 tablespoon of light brown or turbinado sugar. I added a teaspoon of lime juice, and 1 of chili oil, as well as a pinch of turmeric, coriander, mace, and allspice.

    The recipe also call for bok choy. I said this would give it a better flavor and visual appeal..

    5 measured cups. A small batch just in case I make an inedible disaster.

    The recipe also says water..I opted for this slightly more savory vegetable broth. ( I haven't been able to just "make" a recipe yet, not once.

    I used 1 cup of these cherry tomatoes I had on hand, just cut into 2-3 pieces...

    I cut the fish into chunks, a drizzled it with sesame and chili oil (tiny bit, maybe 1/2 teaspoon total) and the lightest dust of ginger,cumin,and allspice..

    Once this starts, its fast. 3-4 minutes on the fish,add tomatoes and go 2...

    Toss in the vegetation and stir like a hyperactive hedge witch. just till it starts to wilt and turn translucent..

    Add your water or broth, up the heat to a decent boil, 5 minutes...

    Hey guess what? She loved it! It was savory and just slightly sweet and hot on the tongue. but still had that almost clear look we like in Asian soups. She says I will be making this again..soon. my answer..."Yes ma'am ". ( what other answer is there?

    yeah, a time or two. made some burnt stew once....or twice. Lol!!


    I have had to refer back to my jpeg files a few times, how moms and grandma’s kept all this stuff in their heads is beyond me for sure.

    How about something...easy?

    Slo mo pork chunks.
    2 lbs of pork loin chunked to 2"x2" 2 cups of mixed brown and white rice, bone broth instead of water for that (I used beef because its what I had) some broccoli, carrots,cabbage,kale, chopped fine. About an 1/4 cup of bbq sauce with a goodly amount of chipotle Tabasco on top.A cast iron pot and 290-300f ish for just shy of 3 hours...

    The poison checkers agree...it was awful, you shouldn't try to eat it.

    Having fallen under the evil influence of the "Dark Lord of falling in freaking holes" ( @Jeff Randall ) I almost always have a machete as my primary cutting tool. But despite the masters teachings and admonitions I am continually unimpressed with what is offered as sheaths for them..
    I need carryabilty, security, and safety. You never know when a quick unplanned trip down a muddy slope might happen, theres always the possibility I might intentionally wander off chest deep in some fetid stinking algae and moss infused swampland...

    So using what I had, a torch, couple of nails, some scraps of things from other projects..and a bit of judicious "borrowing" from the Junglas I once had..

    I actually intended it to be reversible, for R/L or crossdraw carry, although I keep mine on the right for draw in very close environments (anyone whose ever dealt with the briar walls and cane patches in the south knows what I'm talking about.)

    All I did was use a red hot nail to burn/melt a hole thru the nylon to lace it closed. I've used this same technique years and can't recall ever having had a hole rip out. Its ugly but efficient.

    I'm also a packrat, I have untold amounts of little bits of scraps, odd bolts, screws and such..

    Now its secure and belt worthy. Never ever let yourself be defeated by a lack of what you need. There is a way..even if you have to apply a dab of "hillbilly technology ".
