The anrkst6973vs bushman5 Potjie/Cast Iron Cookware Cook-Off!

    Meat. Lots of meat. A full quart of deer, 16oz t-bone, pound of chuck roast and 2 big chunks of ox tail. Stir it enough to get oil on it and wait for a decent amount of sear...about 5 minutes...

    Hard/root veggies, pond and half potatoes, 2 huge carrots, big stick of celery, big chunky cuts. That other 1/4 cup of oil. Don't be shy with the seasoning blend...another 10 minutes. Stir it a few times. Gets a bit of browning on them.

    Then about a quart of mixed veggies from the freezer. I like to soak these the night before in salty water, gets rid of the "freezer" taste.

    Lastly, mushrooms. I love mushrooms. These are Baby Bella's, not sure what the difference between them and whites is, they were darker in color...I might try portobellos next. Experimenting with flavor. :)

    And some dry red wine. 2 of these, 8 oz total. A few minutes and stir a time or two.

    Now see, I'm pretty sure I could break any drought, anywhere on earth. All I need to do is show up and take my grill out of the truck....it will immediately start to cloud up. I'm sure of it.

    Annnnd 5 minutes later. Or as soon as you run around and unplug the insect blasting shop fan and haul all your utensils and such inside....the sun comes out. Yep. We must be in Texas!

    Time to put the stock I made back in. All the bones from the meat have been soaking in this overnight, smells fantastic out here!

    I'll build up the fire and just get this warm enough for a taste test...

    Just a taste to make sure everything is how I want it. A bit more tomato taste than pot roast....the "niet/verboten " on the French onion soup is why. That's ok. Lady Ash likes it this way, Happy Wife-Happy Life. ;)

    Lastly, some whole tomatoes. Secret I learned from an old cat on one of those potjie cooking videos, When the tomatoes pop and split open the dish is ready. Neat trick sez I.

    Now just close it up, monitor the fire, and let's it burble along for and hour or so.

    I started at 12:30, it's 3 pm. There's no one at home but me and I'm going eat while its hot...

    Well "eat" may be the wrong description...I'll "inhale" 3 bowls as fast as I can get spoons in my mouth. :D
    Got a winner here guys, I need thermos's of this to take with to the deer blind. It is ummm ummm good.

    That's all for this one. Y'all feel free to try it and say what you think, or did different. I'm always up to hearing a new trick or taste idea. :)

    holy crap I got off work after only 7 hours. Still had to have a nap though.

    now its pot roast time.

    simple, hot cast iron pot, bacon grease, get it smoking, drop the roast in and sear all sides. Then break the glaze with hot water and add spuds, LOTS of garlic, a red onion chunked, rosemary (lots) salt , pepper, cumin , coriander. Lid it and into the oven for a long slooow cook.

    music for this slow cook is HateBreed, Slayer, Blue Felix feat. Sid Wildon, and several other H.C.W.W. (Hard Core World Wide) bands.

    beer is from Red Truck Beer, their Classic Lager.

    What to do during a heat wave that the talking heads swear is going to kill us all? Why build a fire and cook outside of course! This beastie got stuck in the postal system a couple of weeks...time to put hickory heat under it, burn it black. Whadda ya say?

    Bushie said make a paella ( pah-aye-yah). I looked them up. Yep, I've ordered/had that a couple of times in restaurants. Straight up confession, I didn't like them. I got bland, gritty and bland, and one that just smelled "off"" and I wouldn't eat it. Some recipe study......and a little taste testing and this combo has a hot zingy bite.

    For my recipe I pulled this chunked chicken breast from my freezer, 5-19. Bold seasoning, acv, brown sugar,and a shot of plain ole vegetable oil. Lady Ash was off at the store for jumbo shrimp and link sausage. This is where the first difficulty popped up...

    The recipe I wrote out calls for saffron and yellow rice. The grocery store had neither. None. I wasn't going 60+ miles round trip to the nearest specialty store. Nope. One of the joys of being in the boonies. (Best Clint Eastwood voice "Adapt and Overcome".). :)
