    This was actually a week ago, but I haven't had a chance to post much recently.

    Smoked 15 lbs of ribs over mesquite along with some stuffed jalapenos. Freakin' amazing food!

    I started a diet (more of a lifestyle change) on Mothers Day weekend. To date I have lost 35lbs by mostly just cutting out sweets and unnecessary carbs and fat. Breakfast was the hardest to change...i like cereal or breakfast sandwiches. So i got one of those electric egg makers that can hard,soft or medium boil and poach eggs. I found this to he much healthier than frying them (i love "dunker" eggs). But i didnt want the toast either....So i came up with this breakfast....
    3 poached eggs over a bowl of spinach, tomatoes, little sweet or green peppers, avacados, jalapenos, and sometimes a sprinkle of cheese. I break open the eggs and cut them up so the yolk coats everything. Then I cover it in a hot sauce. I love it! I ran out of jalapenos today so this only has the mild peppers but i added a bit of bacon from the kids leftover sub for dinner last night and a bit of crumbled bleu cheese.... 20190616_144923.jpg 20190616_145109.jpg

    Good job man!
    When I dumped the majority of my weight several years ago I ate a ton of spinach and broccoli with eggs and bacon (I still do, actually), except I ate it for lunch or dinner. Jalapeños and hot sauce make everything better.
    It helped that I already liked spinach and broccoli.

    Cowboy Kent has some great recipes. His cowboy coffee recipe is spot on and damn near the same as mine!

    Just an old blue enamel coffee pot. Nothing fancy. Just need to get a good season of coffee and creek water on it.

    The GSI pots are top notch. I have a huge one I won in a Christmas raffle back in 02 , it's been used and abused but hasn't ever quit.
