Cooking with Smokey C's

    Let's get a Smokey C's thread going!!

    I got 2 porterhouse steaks from the butcher. Have me some powder.
    I also wanted to do a salt brine. I only had course salt but I wanted fine salt so the brine might work quicker.
    I'm hungry Dammit!!
    So I go to use the coffee bean grinder to make fine salt from course. Just like most our grinder has a nice layer of finely ground coffee stuck to the bottom that have never made it out.
    Looks good to me!!
    In the salt goes and out came a mixture of fine salt and coffee.
    I mixed that up with the Smokey C's pit powder.
    All rubbed up and ......AND......I now wait.

    Everything turned out to be amazing.
    The Smokey C's, salt and coffee mix was a huge success. 4 minutes per side in the iron skillet and then 11 minutes in the oven @ 425.

    I was nodding off within minutes of finishing the meal. Food coma is a beautiful thing.

    It has to be one of the best steaks I ever had. I'm definitely using that rub mixture again.

    Here's some fried catfish we did a few months back while doing some canoeing in North Carolina. 1/2 cup bannock mix with about a tablespoon of REH was used for the batter.

    I think I am going to need a box of that Pit Powder and the White sauce! The BBQ sauce hasn't been opened yet, but I am sure that will be the same way. I think I am already down a quarter on my white sauce bottle and I just got it :)

    We used it during class to make jerky, turned out better than store bought.....much better. Then Patrick hooked me up with that jar, and I've been using it almost every day. I'm starting to run out of it, so I'll need to get me s'more soon.
