    Let's talk grilling fellas. I prefer charcoal and lots of smoke (almost always hickory but apple and cherry are good too). Pictures of setups, recipes, preferences, tips/tricks, your favorite grilling/BBQ drinks and sides.. The season is upon us and I just got my new grill going and am enjoying decking it out and using it.

    I love charcoal but fell for the convenience of gas years ago. Now the charcoal is saved for camping trips and whatnot. as far as favorite thing from the grill goes, for me it's smoked sausage and boneless chicken thighs with a light coat of bbq sauce on them.

    Love it! Always after that perfect bite. I'm a big big big fan of dry seasoned steaks, If I ever catch you marinating one, I still eat it but may look at you funny from time to time. haha!

    Ham steak is something that we never do! Not sure why, just never think of it. Looks good!

    My wife and I each got 20 pound hams from work for Christmas. Our local butcher shop cut them into .75" ham steaks and vac packed them for $20 each. Burning through 40 pounds of ham is tough when there's only three of us. This method works great for us.

    I didn't get pics of the burgers because they disappeared pretty damn quick. I made 1/3lb burgers (pre-formed but not frozen) with Red Robin seasoning generously sprinkled over the top. They sat on the 500* grill for about 4 minutes per side before they moved to the side to get indirect heat and then they were topped with CRANBERRY CHIPOTLE CHEDDAR and laid on a toasted sesame seed bun with fresh cut tomatoes and romaine lettuce. Yes it was freakin awesome! The chicken (the ones worshipping the little piece in the middle) was made with a garlic herb marinade that the wife wanted to try. It came out pretty damn good too. The chicken will be topping some baby spinach along with said tomatoes, some grilled yellow onions, and grilled baby bellas for tomorrow's dinner.

    Side note: I really really like this Royal Oak charcoal. It burns really clean and heats up fast in my experience. About half of what I used today was leftover from the last time I cooked.

    Just grabbed a stainless vegetable grilling tray, some charcoal starters, another 15lb bag of Royal Oak, some apple wood for flavor, and a jalapeño corer.
